Max children per room

I am looking at a holiday with my 3 children (wife will be at home working). She is in a new job and not able to take leave, and it's easier sometimes to entertain the children on a holiday rather than at home.

Some Accor properties have a max children per room of 2, despite a room capacity of 4. If I contact the hotels directly are they likely to waive this and let the 4 of us stay. Or do I just book it as 2 adults and 2 children and chance it?

You can call the hotel and explain your situation - most hotels won't have an issue, especially given that it is only one adult in the booking (meaning, the 2nd adult isn't using the room). Some hotels, will charge an extra $30 or so per night for the additional child.

The Accor website is pretty challenging when it comes to kids... they will show most standard rooms as available for 2 adults only when the room can easily allow a child and in many cases the hotel can provide a cot / rollaway (speaking from experience).

You will probably be fine if you book for the 2 adults / 2 kids.
