Good on you!! It's never too late to start travelling.
I would definitely go Qantas PremEcon and get the 2 seaters. I would also break the trip up at least in one direction.
Night flights are better for leaving Sydney - 2 reasons: a) being nervous, you don't really see how high up you'll be and b) if you have a very full on day, you can be sure of being able to fall asleep as per your normal body clock, wake up refreshed for your destination. If you think you won't be able to sleep, I would take something like Restavit (OTC medication).
Within Europe, I think taking a First Class Eurail ticket from Frankfurt would be great - if you have time that is. You will go past some beautiful countryside and you won't have to risk flying any 2nd rate airlines.
When you get back, you'll probably get the travel bug and start planning your next holiday destination!
