OW Classic Award. Book two flights online now, rest later??

Yet another question re: OW Award. (Extremely grateful for all previous insights!)
Am I able to book the first (Melb-Amman) and last (Lon-Melb) flights of my trip, then input the additional flights at a later date? In other words book two of the potential 5 stopovers?
Reason being:
1) Business seats are available on these two legs around necessary dates (& I don't want to miss them.).
2) I'm not sure yet where/when I'll be travelling in between these two flights so (obviously) can't input them yet.
I realise I may be up for 'change' fee (5000 points) but imagine worth it to secure award seats?? Thoughts please?!

Excellent, will do, thanks very much........and here comes another question, for you (and anyone else please)? If I partially book now, prior to the increase in required points deadline (18/9) do you think I will be charged at the new rate or the old one??

Opinions vary....
Website says bookings "created" prior to 17 Sept will retain the current points cost.
I'm hoping so, as I've got one flight to add to my award (4 passenger award,so the increase is not insignificant), that isnt released until late Sept.
