scheduled to fly SYD-HKG later this month and back in early March. The seat maps still shows the old 2-2-2 J configuration. whats the chances that it’ll be substituted with an aircraft with the retrofitted configuration?

Unlikely - there is no spots available for them to start fitting the new seats.

So, I've just checked my booking. Yes, time changes, seat gone and seat selection 'ineligible due to a schedule change' (don't they mean aircraft change? )
 
Gawd I had that "team" rubbish. Cabin crew is all you need. Invariably, when any form of management starts talking about a team, it's a precursor to some form of shafting. It's just another bit of meaningless MBA speak.
