I'd think that the crew don't know what the menu is, until it's service time or when they come around asking for options? So, they may not know that there is cheese on offer today? That being said, I agree with your point, if the crew knew beforehand (somehow) that there is cheese on offer, it would be great if they can leave it out to thaw.
