I'd think that the crew don't know what the menu is, until it's service time or when they come around asking for options? So, they may not know that there is cheese on offer today? Pre-CoVID experience on QF127/128, the crew had no idea what the menu was, so when I asked what they had for dessert, I vaguely remember the FA telling "the little cake thingy & chocolate"How challenging is it to leave the bloody cheese out at least an hour before it's required ??

IIRC menu options, catered load and the number of each dish are discussed at either the pre flight briefing, or once on board after catering has been checked and confirmed.I'd think that the crew don't know what the menu is, until it's service time or when they come around asking for options?
