Hi does anyone know if flying ADL SIN and then SIN BKK if you are HLO will they take a bottle of wine from you that you purchased post security in ADL when transiting SIN

Buy your duty free in SIN. Usually cheaper than Australian duty free shops.
They give you a sealed bag which will be acceptable for the gate security.

Indeed you don’t take the sealed bag through security - DF purchases are delivered to boarding gate waiting area post security and you collect it there - couldn’t tell you the number of times I have forgotten to collect and had it delivered to my seat - but I would not necessarily advise this as a plan

They only have 45 minutes transit so probably won’t have time to shop. Can they buy online prior?

Nope 45min transit won’t work for purchases at Changi DF stores - all purchases need be made min 1hr pre dep - but yes can buy online b4 and have it delivered to boarding gate
