In my Velocity account it says I've earned 160 status credits since 27 Feb 2014, the date of my latest status review. But the box at the top right says my Status Credit Balance is 560. The 160 figure is correct; where does the 560 come from?

You need to remember that the Velocity program has two counts of status. The 160 reflects the count since your renew date (and is used to renew status). The 560 will reflect the count in the last 12 months. This is the count used to upgrade status. As you head toward your review date they will come back together!
