I frequent a busy sandwich bar in St Leonards and it's always nice to watch the staff handle money. Without fail they always remove their gloves before receiving money from a customer, or else ask another non serving staff member to take the payment. After they have returned your change then the gloves are put back on again.
It's small things like this that tell you a lot about how the rest of the establishment is probably run.
