I don't mind that salad either, it's an ok size to match the meal, during the limited times they actually serve a meal.I think the context when people are making disparaging comments about the NP "salad" is the small side-salad bowl of a couple salad leaves that generally accompany international (and perhaps trans-continental) flights. It's fairly pitiful.

I am not sure if it it time to finger Neil Perry for the blame.He sold out to Quadrant private equity group in October 2016.The article only gives 2017 as the time this practice was noted.I think the finger is pointing towards someone else than Neil Perry as the instigator of these deceptions.
A pity as NP's menus are one of the reasons we have deserted QFi.
Though it was the Rockpool group who voluntarily admitted to events going back I think 5 years and voluntarikly paid back the money.I have no doubt it was practiced during his tenure and laid the base for their normal processes:
"The latest serious allegations follow a 2018 investigation by The Age and The Sydney Morning Herald that revealed the systemic underpayment of wages at the restaurant group, which is part-owned by celebrated chef Neil Perry.
The investigation uncovered evidence that permanent chefs at Rockpool were required to do excessive unpaid overtime, a practice going back many years.
That practice pushed wages well below the minimum rates of the award, the wages safety net. Staff were being paid for 38 hours a week while regularly working 20 to 30 hours of unpaid overtime.
The Ombudsman has since launched an investigation into Rockpool Dining Group and the company has paid back $1.6 million for one year’s underpayment. Rockpool has since extended those repayments stretching back a further five years but has not detailed the total cost.
