I loved IST. And I never say to people when giving travel advice, 'you must ...'.

But, you must not miss Cappadocia and the underground city etc etc.

Yes - all the 'must sees' add up to many weeks, but all worth seeing.
 
The underground cities in Cappadicia are amazing, try do both the big ones. Also hot air ballooning in Goreum is something else. GPS would do the trick. My two trips were without, and only found IST difficult as someone mentioned previously, the tragic is really heavy.
 
Another place that is beautiful is Guzelyurt national park. Cheap accommodation on a river full of trout.
 
We had 7 days in Turkey Sept this year. Flew direct to Goreme, Cappadoccia (transit IST) with late arrival and not a better place to get over jetlag (the early morning wake ups made watching/ballooning a breeze). Did a tour here incl 1 of the underground cities- not so enamoured would have been better hiring a car and doing our own thing with hindsight.
After 3 nights flew from there to Izmir and picked up hire car- no issues driving straight to Selcuk with GPS. Went to Ephesus same afternoon (worth having a good guide at the site- many hotels can arrange- and also pay the extra for the terrace house section). Watch out for cruise tours in season. Drove next day to Aphrodisias (we loved it here and did the site on our own with lonely planet as our guide) then a quick visit to Pamukkale and drove back. Driving was easy, good multi lane highways, did need to watch for tractors etc and the speed idiots but our hotel recommended sticking to the speed limit due to speed traps and the whole keep right unless overtaking worked fine! Was a very long day though (3hrs drive each way from Pamukkale before sightseeing).
Back to Izmir and flight to IST. we had limited time in IST which was a failing if itinerary.
I'd been before but partner hadn't and this was a tasting plate of what Turkey can offer!
Don't be afraid of driving- will let you see the country more authentically but also the distances can be significant so flights are useful. We used TK, & Pegasus, no issues but worthwhile prebooking extra weight for check in if needed (there also was some flexibility then for an extra kg beyond that).
Turkey is a lovely country to travel and I hope you enjoy it!

Could post such similar photos from Goreme Mark4217! We stayed up the hill in a cave hotel and loved Goreme!! Bonus was the balloon views from our balcony! was my first time there and definitely in my top travel spots ever!
We also loved our Selcuk hotel, IST hotel was good and met our needs! Met family staying nearby So also checked out their digs.

Oh and when booking ahead- many hotels need you to email re pricing and email CC details, might seem dodgy but we had no issues despite reservations about this method ! I tended to email number, exp date of card and CCV separately which made me feel happier and no issues arose with cards. you pay a hefty premium for fully Internet booked or international style bookings IME- turkey is behind in this regard but your experience in the Stans may stand you in good stead here.
There is however unanimously great food to be had!!!

I too stayed in Goreme which I flew return to on TK, from IST. Picked up from the airport and taken to A was a lovely stone house slightly underground, but I was pleased to have a window looking out to the coutyrad garden and all ensuite. And, a wonderful home cooked breakfast. It turned out to run be owned by an Australian woman who had lived in Canberra married to a Turkish man who ran a restaurant in the village and offered a discount for meals. So I got the best of both worlds. She was great at recommendations and directions. It's one of the best times I've had on holiday.
