The course details sound interesting, even for the non nervous frequent flyer... Whilst no doubt most of us have an idea how everything works, it would be really interesting to be shown some of the these things first hand...

drewbles, what does the pin look like?

Two forms. The most common is silver and looks like a stylised X. A later form is red enamel and looks like "<".

Other pins that are sometimes worn by cabin crew are a long service pin, and some have quite extensive somelier training, and there's a pin for that too.

The only other thing that's out there is a "Chairman's Award" pin, but they're pretty rare. About the size of a 10c piece in gold, with either four diamonds or rubies.
