When you are getting insurance, and they ask where you are going, do you also include connections where you are doing nothing but sitting in the airport for a few hours between flights?

eg, I have QF3 SYD-JFK coming up. Would you include New Zealand on the travel insurance when you're only there for 2 hours waiting for the flight to reboard?

Anything can happen in 2 hours. (NZ - earthquake, flash flood, etc...)
Some sites will specify to include transit points if listing countries, others may require a trip to the paperwork. It's insurance - I tend to err on the side of caution; the cards are not in my favour.
Personally, I only buy annual policies that have an option for "Worldwide" - fully aware that for various reasons, this is not an option for all.

The quote page on most insurance companies I have looked at state you do not need to include transit points of less than 24 hours. This is outlined in the ‘where are you going’ box.

Only one I’ve looked at has asked me to include every country, including any stopping places.

In your case, given the premium for the USA will far exceed that on NZ, it’s unlikely to be a material change in the policy price. It may be material if you were flying to Europe via the USA though, for policies that require it.

In this case, it's a round the world trip with stops in the US, Netherlands, Denmark and Japan and connections in DOH, HEL, LHR and SIN (longest being 9 hours).
