An update....
I flew MEL-SYD-LAX-DFW-MIA yesterday. By the time I got to MIA the MEL-SYD-LAX flights were showing on my activity statement. I'm now writing this 24 hours after completing the journey and the other flights are also now showing so AA flights only took 24 hours to appear.

yes, this appears to be normal, 24 to 36 hours later the SCs appear, however I found that over the weekend and public holidays there is often a delay, like there is some sort of processing in the Qantas office that must be done.

It seems to be even quicker. My MIA-PAP-MIA flights were showing up just 12 hours later. A weekday again though.

I can back you up on this. Yesterday (Thurs in US) I flew MIA-ORD-SEA. The MIA-ORD leg was showing on my status this morning but not the ORD-SEA leg.

Looking at Australia East Coast Times
MIA-ORD Take-off: Friday 01:40 Land: 05:00
ORD-MIA Take-off: Friday 07:35 Land: 12:05

So, it looks as points updating shuts down around midday on Friday.
 
A further update on this. On arriving at the AC at SFO I thought I'd see if I could get in using my PB QFF card knowing that I'd now made it to SG on this SC run. Initially it wasn't possible but the AC angel removed my QF number from my booking and then reentered it and 'presto' it was now updated correctly and I was allowed in. In fact, it wouldn't have been a problem getting in as I still had the 30 day AC pass. She told me that for the rest of my trip all I should be recognised as SG which will be useful when my 30 day pass expires.
 
So, it looks as points updating shuts down around midday on Friday.

9/10 when I fly to AKL on Saturday morning with QF, the points have been added to my account by the time I land. Last time I flew, the SYD-AKL leg got me across the Gold qualifying mark. By the time I switched my phone on after landing and checked my QFF account, the points had been added and the status had rolled to Gold. The only time this hasn't happened was when I flew into AKL on Christmas Eve last year, then they were added on Boxing day!
