Would an A321XLR have the range for AVV-SGN? VietJet Air doesn't have any widebody aircraft.
Or perhaps they're planning to fly something like AVV-DPS-SGN.

Fairly comfortably according to Airbus. Well, comfortable in terms of range, I doubt that that would be the case in the cabin.
Wikipedia (FWIW) suggests typical range of 321neo is 7400km, AVV-SGN is~6700km.
