Had dinner at BTWN ("Between") on 14 October with a friend who works for the group and was in town to help with the opening.
Food was incredibly good. Had a slow cooked lamb shoulder that required virtually no chewing, paired with a rather nice and would be even better in a few years Vagabond Blewitt Springs Grenache 2022. The signature dish, apparently, is kangaroo tartare and was nice, but that sort of cuisine does little for me.
With the prices as they are, I doubt I'll stay at a W, unless my friend can organise something or work is paying. It does look pretty spectacular though. I was surprised by how any families were there.
The location is somewhat unique and the facade design is amazing as a structural achievement. Professionally, I too was interested in the sound insulation. This sort of issue is a common project for me, albeit not often on this profile level. The Western Distributor carriageways with constant and swift moving traffic are just a few meters from the facades and yet the residual noise is barely audible. There is probably use of sound masking too. I would expect there to be no issues even for the lightest of sleepers.
