Interesting reading all these 'dreamy' comments and I wish you luck but I don't ever see Qantas entertaining anything more than what they currently do. That way it costs them basically nothing because almost no one takes up the offer as it is either inconvenient of too little to bother with.
For my birthday I want:
(1) champagne not domestic sparkling garbage;
(2) champagne on boarding in J for all flights, domestic or international;
(3) cabin crew who offer me another champagne as soon as the fasten seat belt sign is turned off after take off, instead of disappearing into the galley for the best part of an hour to set up the drinks trolley.

Like a status run except a 'birthday champagne run'
I am so going to have to do this.Only if you are flying on your birthday though?
Maybe a trip across the date line to maximse champagne opportunities?

A trip to Santiago in June is on the cards!
There should be options. I like the "OR" in your suggestions. Some folks don't drink the bubbly...,May be DSC offers on every birthday, but restricting travel dates to only 3 months from the date of birthday and for one booking only - can do domestic only DSC as well ?
Or a nice bottle of red or champers - let the birthday baby choose within 1 month from the date of birthday?
Or choose 5000 QF points - again, choose within 1 month from the date of birthday?

That's probably more realistic than my expectation that Qantas will abandon the drinks trolley routine and just serve drinks instead.Look I want my Emotional Support Donkey and it should get free in cabin travel with me for my birthday month. End of story!

My $30 birthday voucher also needs to be redeemed by 31st March and I have a few options. (Unlike the 72 hour one sometimes receives after booking with Qantas - although I did use one recently for a BKK night costing a net $2.70.)I'd be happy to see an extension on the $30 hotel vouchers. They go a long way for budget travelers. I used min in Sept for Manado. Now with coronavirus that trip may not go ahead. My husband's voucher expires end of March and the travel industry is so unstable now with cancellations and quarantines that we don't know if we can go.
