The B1/B2 will afford you the same benefits that entering on a visa waiver would permit. You cannot undertake employment
Whether your child can enrol in school in the US, I don't know and I would recommend asking the US Consulate
As far as daughter working in the USA, I cannot see a visa category which is likely to be one that she would be able to get and so I doubt that she will be eligable to work
As far as entering as a visitor whilst residency is being applied for, again the best place to ask would be the Consulate but my understanding is that you can enter to visit whilst it is being considered
If wanting to go for an extended period and being able to work et al, you will probably need to wait until the petition for residency has been completed
