Would you book?

It depends on the airline. But in my experience, generally not. (i.e. they may only rebook you onto another flight with availability - particularly if the flight is with a partner airline.)
I'm another vote for the "generally not" answer, although they did help me once when I was a P1!

You would also need to consider travel insurance.. if no vaccine then if you can get insurance it may be prohibitively expensive. Ireland is not a reciprocal Medicare country.

I phoned Qantas about a similar situation and if you cancel, it will take about 10 days to get the points credited back and about 10 weeks to get the money back. I have booked for April next year as I can afford to loose 6000 points each and wait the 10 weeks to get the taxes back.
I will cancel if I can't get travel insurance and if I have to isolate on the return though.
