MEL->LHR Return via HGK - possible?

Now VA are flying to HGK from MEL is it possible to book either with VS or VA a return from MEL to London returning via HKG for a 2 day stopover on a single booking? Both Virgin website only offer this via SIA and hence it has an unwelcome stopover in SIN. Going out 21/12 & back 11/1

I appreciate that VA & VS really only share a brand, but it seems strange it's not easier to book a trip like this.

Yes. VA publish such a fare via HKG, with VS to London. You need to use an agent to book it.
