I really appreciate your help, just a couple of things as have found conflicting info, are you able to feed the little one during take-off and landing? as have been told this helps with there ears but didnt think would be able to this.
Also we have selected 1D & 1F on Virgin 737-800 would this be the best side or 1A & 1C?

We have done a lot of flying with our infant son who is 20 months old now, in PE and the new Business configuration plus economy. He is getting to the age where he needs his own seat or the extra room offered in J class suffices if we put him on our lap. The old PE configuration was good as you basically got the third seat for free.
You can feed them whenever you want, at the age of your child I would assume they would still be on milk so that is pretty easy to sort and feed during take of or landing.
I am pretty sure that you will not be able to select seats 1A & 1C as they are emergency exit, even with the new business configuration. It was like that on our flight a couple of weeks ago. We have usually selected 1D and 1F but I am now of the view that was not the best option as the last two times we did this I realised it is actually a pain having to get up and down to the bags about 10 times for an hour flight, probably more than that actually and the storage pockets on the wall in front are small. I think having a wall behind us in row 2 will be good for passengers behind (as he likes to stand up and play with people behind) and that being able to have bags on floor and big seat pocket storage will make row 2 the better option when travelling with a child, well we will find this out on our flights next weekend.
