I'll respect anyone's wishes if they don't want to engage in any sort of interaction on an aircraft, but I have had some of the most fascinating conversations of my life on a plane.
 
I prefer to be left alone unless traveling with family. Planes are a great place to zone out and just relax so I kind of hate it when a talkative person sits next to me. I am polite but really struggle holding any interest in what they're saying and speak little myself so eventually the person gives up.

Traveling with my boss is a nightmare because I don't give a rats cough about budgets and staff issues at 6am or 6pm after a few beers in the QP.

Traveling with sycophantic subordinates can be equally annoying - although you can tell them to switch off
 
I rarely converse beyond a couple of words with a seat neighbour (even one I know). And mostly those words are not casual conversation but a request or acknowledgment of same. There are some very rare exceptions to this, and normally initiated by the neighbour. I'm usually happy to either close my eyes and try and snooze, or watch a movie if available.
 
Privacy screens are great. Except for the time I sat next to quite a famous model in the upstairs J on BA.....

You can see from the test that there are times when standing next to someone is the accepted etiquette. So I don't care so much. What I don't like is the guy next door who has a good look. Unfortunately, telling them to take a picture because it lasts longer might be misinterpreted.

domestic and trans tasman the shadow has worked well for me which I am very grateful for as I either want to work a little bit or relax. International when in J I don't really care because I take either 12E on 380 or 16A on 747 so I don't have to climb over my seat mate, sometimes I have a nice conversation with someone sitting next to me but I usually just watch movies or read.
In whY I had a cute girl next to me coming on a working holiday to Oz and we chatted for a while from BKK to SYD but usually I am the quiet person.

You're right, sometimes listening to others is fascinating.

Last year when travelling from TPE-ICN I sat next to a freighter pilot deadheading to his next job.

We had a genuinely fascinating conversation about his work.
