My suggestion is to save Kyoto/Osaka/Nara as the finale of your trip. I definitely found those more "traditionally" Japanese than any other. Hiroshima definitely worth a visit, as well as nearby Miyajima - only about one and a half hours away via bullet train.

A day trip is theoretically possible from Amman but not Tel Aviv. There are now only two flights a day in each direction from Tel Aviv to Cairo compared to about nine from Amman, and they only give about a 3-hour layover in Cairo.

Air Asia premium flatbed is perfectly acceptable and MUCH better than a premium economy overnight flight. Also the meals on Air Asia are actually very tasty, just a bit too small in terms of serving size, just order an extra one.
I've stayed many times at the Ibis budget - but that was before they jacked up the prices, and for $30 more, I'd probably go to the Holiday Inn. I never had a problem with the rooms though.
