I will be very unimpressed if I am declined after all the income evidence I provided (which matches my application). If they want to decline they should do it based on the application (unless the evidence doesn’t match the app of course).
I think you will be fine if you are willing to entertain all their requests.
Anyhow, I think they need to do a better job at training their staff. The people I was in contact with were unhelpful and I had to reach out to them multiple times to keep the process going, instead of the other way around. The overall impression was that they were just trying to push back so they could tick a box and move to the next customer (like sending meaningless texts instead of actually calling and progressing the application). This is my first decline in 20+ applications and by far the worst experience.
