rare to medium rare for me. Had a very nice piece at Kingsleys in Sydney not so long ago and planning a trip to Rockpool soon to try Neil's full blood Wagyu...
 
I grew up having meat at home cooked for me medium-well. I really didn't enjoy steak that much and didn't have it for a number of years after moving out of home.

Fast forward a bit in my early adult-hood and I decide to try a medium-rare steak. It was somewhat of an epiphany, and I thoroughly enjoyed it, and now that's how I have it done :)

I prefer to have my meat well cooked unless I know it has been marinated properly in oil/salt/lemon/onions/garlic etc for ~24 hours or more.

On rare occassions medium or medium to well done is also acceptable but I do not like seeing any blood in my meat.
I am the same, much prefer well done.

I may be getting confused here but I think I recall it being mentioned on AFF that you have a Greek background - is that true?

I have a Greek background, I was always brought up with meat being cooked well done by almost all of my extended family, and anything less than well done to me (usually) goes uneaten, although I can tolerate a certain amount of 'pink'. I am sure it is due to my upbringing!

I do have a Greek background. And well done is the way Greeks like their meat.

We eat a lot of stews and casseroles where the meat is slow cooked so very small chance of the meat being uncooked and I love it when the meat melts in the mouth.

Definitely agree. I do not like Athens much but one thing it has is food!

For what it's worth to others who might point out a lack of trying rarer meat, I have tried lesser-cooked (i.e. medium, medium-rare) meat and I really don't like it. Medium-well is edible but any less and it's just unpleasant to me.
 
I expressed my like (rare) further up in the thread. I believe I worked my way there from medium through medium-rare many years ago. I have no doubt that the more steaks are cooked, the less flavour they have.

Slow cooked and braised meats = awesome.

Tough, dry, murdered meat off the grill = travesty.

I know some restaurants that refuse to serve a steak over medium doneness. I agree with them. Slow cooked meat is amazing. A good rare-medium/rare steak is bliss. To quote a friend when eating medium rare Kobe beef "this cow died for my pleasure!" :D
 
Raw mince? No thanks....

1. It ain't mince. it is very tender eye fillet shaved thinly with a very sharp knife
2. It ain't exactly raw..........well ok it is
3. Don't knock it till you try it
