How do you like your beef (steak, roast)?

But that is what makes the whole dish.

IIRC it's actually a raw egg yolk, which is a bit more understandable than the whole raw egg (i.e. with whites).

Not that there's anything technically wrong with eating a whole raw egg, though it's not for the weak stomached (as are many raw things).

Slow cooked and braised meats = awesome.

Tough, dry, murdered meat off the grill = travesty.

I know some restaurants that refuse to serve a steak over medium doneness. I agree with them. Slow cooked meat is amazing. A good rare-medium/rare steak is bliss. To quote a friend when eating medium rare Kobe beef "this cow died for my pleasure!" :D
I agree with you but there is a difference between "well done" and "burned".

I do not like burned meat either. When I eat meat outside of home I usually order medium-well done.
 
I've just remembered that at a Sizzler's I went to a few years ago they had a series of photos with the meat cooked to various stages and the name of the level of cooking.

Made it very easy to just point at the colour of meat you wanted and say "that way please".
 
1. It ain't mince. it is very tender eye fillet shaved thinly with a very sharp knife
2. It ain't exactly raw..........well ok it is
3. Don't knock it till you try it
I don't think I need to try it to be able to knock it. Raw meat just isn't on my to do list.

The raw egg probably wont go down too well with JohnK either then ;)
Raw egg is quite nice. Some vegetables are quite nice raw as well where as others really need to be cooked.

You might want to avoid the steak at RockPool then JohnK as I think it is cooked sous vide and last year I recall it being quite pink/red.
That will depend on my mood on the day. I have eaten under cooked meat in the past. It is not an enjoyable experience but sometimes it is unavoidable. e.g. You go out to a show at the club that includes meal and the meat served is medium rare at best. I still eat it while complaining about the poor choice of food. ;)
 
But colour is not the best indicator - you should be using temperature...

Have to admit I have never had a decent steak tartare before. In fact, can't remember if I've ever had it before. At one point, seemed to be the 'in' thing to eat, although it is quite polarising, viz. if I had to make a set menu for a nice lunch / dinner and I didn't know the kind of people who were coming, I probably wouldn't put tartare on the menu.
 
I think rare = bloody is a misnomer, in my experience a well rested piece of rare beef isnt bloody.
