Yes the information I have had coming in via my patients over the last couple of weeks is that hotels are full, restaurants are to capacity most nights. Just crazy, and don’t get me started on the crazy hire car prices.
Those "crazy hire car prices" convinced me to change a potential Tassie visit in October to South Australia.

Best I could find for a small "Getz" size car for 10 days in Tassie was $1,230; booked a Kia Rio ex ADL for $312-49.

I'm sure the $900 saving can be well spent on food and wine.
 
And it's not just Hobart.Try getting a hotel in Launceston for under $200 a night in May.I have to have a Queen room in definitely not a first tier hotel for the first 3 weeks of my contract before i can move into an apartment for the rest of my 3 months.

Yeah, they just simply have no stock in many places due to having to sell vehicles to survive in Covid times. At a recent trip to Hobart the Rental agent said something like 80% of stock in Tasmania was sold off. Hopefully things are recovering enough that the companies can purchase some new vehicles

New cars are in very short supply due to the world wide shortage of computer chips. Same thing for ps5 etc and new computers etc. so they are struggling to buy new ones
 
The moral of the story - if you want to eat out at of the recommended places you need to book well ahead.
