I'm still struggling to understand the terms and conditions of this promo.

I understand that I have to spend at least $500 at one property to qualify.

But if I spend $500 at one, $300 at another, and $250 at a third property - does that then count as a $1000 spend which nets 10,000 points - or does that only earn 5000 points? (I hope that makes sense).

As it is I have to cancel one of the three bookings that I made this afternoon for my next trip as I realised that I had booked three properties totalling well over $1000 - but no one property was over $500.

Your $200 and $300 booking is irrelevant as per the T&Cs:
There is a minimum spend threshold of $500 on a single booking to be eligible to earn bonus points.

OK cheers - I wasn't sure whether that was saying that I had to make at least one $500 booking to make all of my bookings count towards the total - if not then I might change two of my bookings as one was $488.
