- The crust is impossible to bite off and chew.

It is meant to be quite crusty, and it's better if you toast it, but realised that QF don't toast their bread on board (they merely warm it, if even that).
Princess Fiona has a good point - try to warm it up a bit, and it'll soften slightly.
Worse comes to worst - let the crust be - just ask for more bread and return the crusts. Not like your hair won't be curly if you don't eat your crusts
- When spreading butter with a knife, it creates huge holes in the bread.
Try spreading the butter on a flatter angle. If the butter still tears the bread then the butter isn't soft enough.
- 1 slice is too small to enjoy with a poached or fried egg.
So ask for another one? I'm sure they'll offer another slice on the spot if you ask nicely, especially if it isn't a full cabin.
Other airlines don't use sourdough and it's just QF from my experience....?
There are some other airlines, but they usually do have other bread varieties available if sourdough isn't your thing.
I don't know about other domestic operations around the world that use sourdough, though I'm sure that VA have had sourdough rolls before once (with the same crusty crust).
There is no alternative in the First Class lounge or in Business on board.
Well... for the FLounge maybe you could try to request gluten free bread? Just saying that it's not necessarily tastier, but everything tastes better when it's toasted. Even sourdough.
I thought breakfast in the morning there was usually at least two bread options. Maybe the other is spiced fruit bread, don't know.
