I believe the Amex insurance only kicks in from mid March so this question is probably not relevant in your case anyway I'm afraid.We're travelling to Fiji just after xmas and one of the Fiji government requirements is "Travellers (foreign nationals entering Fiji for a holiday) must have proof of insurance for COVID-19 coverage."
Does anyone know if the Amex Platinum card insurance cover is adequate or do I need separate coverage?

Yes correct. That pdf looks like it is for their paid travel insurance. I don't think it covers Covid-19.https://www.americanexpress.com/con.../pdf/insurance/files/travel-insurance-pds.pdf does not mention this, and in fact has a large exclusionary statement saying that nothing related to COVID-19 at all is covered.
