Ok, here in Aust, you have to fit the job, not the job fits you, despite what people say.
Aviation, comes into 3, eh:
Piloting
Non piloting (but still aviation, more technical than below)
Non piloting, non aviation, but airport services, cleaning, airport electrician, catering etc
A lot of the parts of the job, that you might be into, interested in, would now be computerized, rather than using "people power".
Its hard, we have said on here, that there is the sponsored way, where you fit the exact requirements, but it seems that you are set on "flight dispatcher", but for which the Aust airlines, might have already computerized a lot of the part of the job, maybe for eg:
EK 409, UAE409, MEL - DXB, 6:00 dep, MEL dep taxiway, Alpha2, Charlie4, Foxtrot7, hold prior runway 16 is the best one for a MTOW plane of load type 380, 35,000 kg fuel, and that the 380 will vector turn over a certain angle, at that certain rate of climb, and turn at vector point NNW, ...
Now, anyone in aviation will know what I mean by that.
Where as years ago, a human would be part of it, now tis all computerized.
If you cant find the job description, it means it does not exist.
If you see something too close, and asks you to pay money for tests, its a scam, if it says you have to pay for a visa, its a scam, ...
If the employer, lets just say APAC really wanted you, they would bear all the costs of getting you the job, coming to Aust for an interview, for eg.
I would not trust too much online interviews, knowing how far scammers can and will go.
Its hard, to say, but if you really want an aviation job in Aust, get looking for something the employer wants, not what you want!
You say you are close to being sponsored, but a lot on here have asked, who is the sponsor, if an airline, or an airport operator.
Note too, that if this thread goes too far, the Mods might take this/the post off, ie, delete it.
You have a lot to look into, chase up the sponsor, if you are really keen.
They are the ones who have to do the application for you.
If you just apply for a visa and come for a visit, that is ok, but working/job hunting on an visitors visa can be a breach of visa conditions.

Sorry, I am not an expert, and I do as a lot on here know, talk a lot of bull****.
But seriously, chase up with the sponsor.

MEL the most livable city, but the most expensive, too.
The blurb says they have 20,000 jobs...
There is a job going called Terminal Coordinator, maybe its like a Flight Dispatcher, am not sure if the job is open to international applicants, and if they have someone already sitting in the job as Acting Terminal Coordinator.
Edit: ah, its to cover someone's Maternity Leave.
