Going to try this tonight, yes it's credited to N.P., but I'll give it a go anyway, I will add some peas and green beans.
Roasted snapper with fennel and tomato
This is a really easy recipe ā just throw the vegetables and seasoning together in the oven, bake until tender and then finish cooking with the fish on top ā just remember to add a good squeeze of lemon as itās served. Any white-fleshed fish works, and the sauce is perfect with chicken as well...www.goodfood.com.au
Tonight
Sticky mulled wine roasted beef
Start this recipe one day ahead. It's a gamechanger come Christmas Day ā just bring the meat to room temperature then shove it in the oven. That's what Christmas is all about: minimal fuss, maximum impact and the greatest time possible with the people you love.www.goodfood.com.au
Duck-fat roast potatoes with garlic and rosemary recipe
Some chefs boil the potatoes first and finish the cooking in duck fat. Serve with pan-fried fish, roast chicken or grilled steak.www.goodfood.com.au
Brussels sprouts, bacon and chestnuts
Brussel sprouts are a revelation cooked like this.www.goodfood.com.au

I have been moving my 94 yr old mother to aged care. Plenty of old recipe books to look at. A couple of pages out of the CWA Coronation Cookery Book of 1974 (there are some older ones). I like the plating tips for pineapple.

Some things just seem too good to throw out. I also found a recipee book put together by a lady that was blind. I posted about this one on the Gunnedah Facebook site and got a huge response-so many people who said they still had a copy in their familyI've still got about 10 of those. Not sure what to do with them
