What I ate today - the food thread

Ok, so found a recipe for pancakes/pikelets (sugar free flour free gluten free) to try.
Simple and straight forward. Turned out great for my limited cooking skills but made too many for just me!

Slight nutty flavour from the almond meal.

Sounds similar in our house. When I make pancakes for MasterC, they are keto pancakes so just have almond meal, egg, banana and a little baking powder. They usually get eaten so can't be too bad!
 
I need to get a real life. Making too much stuff out of increasing boredom.

Banana, cinnamon, walnut muffins Sugar free, flour (gluten?) free, low carb.

The sudden rain onslaught recently caused a few pumpkins to burst out of their skins so I had to use a couple up. I found some Out of date by 9 years sultanas in the cupboard and some left over Frangelico of a similar vintage. So, I macerated the sultanas and incorporated them into a pumpkin cake. It’s delish and healthy enough for brekky. Can def recommend Frangelico in a cake and soaking slices after it’s cooked.
