Either the Parmelia Hilton or the Hyatt (both at opposite ends of town).

Be aware that the Hyatt is relatively isolated from the CBD where there are some good hip bars and restaurants, whereas the Hilton is an easy stroll. There's nothing much around the Hyatt.
 
The Hyatt is however a better hotel.

But I am probably not going, so buyer beware :p

The various Hiltons have been more popular in recent years, so I would put my money on it. (There's only 1 Hilton group hotel in Perth). Although for myself, I don't (legitimately) have access to any of the Hilton discount rates (e.g. government), so chances are I'll be slumping it in the nearby Ibis or Holiday Inn.
