I had to promise my Travel Doctor not to go anywhere near monkeys or dogs. Otherwise I was getting Rabies vaccinations!!

NB. I was attacked by monkeys 30 years ago and a gardener shooed them away.

PS. The Eggs Benedict at Intercontinental in Vietnam are the best I've had anywhere in the world

Cooking black rice in the production kitchen.

The pastry production kitchen is a specially cooled area.


There are 13 cold rooms in this place. Most are attached to a "cool" room where food prep is done.
The heat and humidity would make it very difficult to keep the food from spoiling otherwise.
It's really unusual ( compared to Oz) to see separate rooms with closed doors for different foods. Beef had its own room. As does pork and of course seafood.
Some cold rooms are walk through to a secondary walk in freezer

These are the black truffles I mentioned. For those who don't know, there is a serious amount of cash sitting in this tray.

Tomorrow is silent day. So the Hindu staff will be absent.
The Muslim staff run things while they are away.
Same for Ramadan.
So tomorrow I get to play in the kitchen.
I need to think how we will use the truffles.

I considered going out into the fray tonight. Decided to chicken out. There is a small celebration here in the resort. I was out earlier today, it's bedlam out there. Anyway here is a taste of what they use in the parade.

Nyepi Day. Most places, even resorts encourage people not to do anything but contemplate. Not talk and not make noise. That would be rather nice with the noise that Bali usually is.

We are basically confined to barracks tomorrow. No surprise that the day spa massage girls are booked solid.
I'm fortunate in that I will be getting a cooking lesson.

Yes - it certainly will be interesting, if quiet, for GPH! Has the resort informed you of the protocol? It's quite important to know it ...

On a travel note: On the 3rd day the entire Island comes to a standstill, with no scheduled incoming or outgoing flights from Ngurah Rai airport in Denpasar (DPS).
 
Life inside the resort is much slower. We keep our curtains closed if we have lights on in our room. No noise , meals will all be "buffet".
No music around the pool. I suspect the bar may be closed too. But swimming is ok.
There are some other activities apparently. But I've not read the fine print yet.

GPH, you need to focus, please.
There are truffles needing attention.

What are your current thoughts?

In my view, the simpler the better, if the truffles are good quality. But then it will depend on what other ingredients you have to play with.

Brings to to mind another "way back when" experience, when Bocuse was in Melbourne and did a truffle menu - with every course, including dessert, truffle based. Your chef may not be quite that adventurous - or have that much leeway in his budget. :)
 
But the truffles seem to be cryovaced. That might make a difference.

This is the problem. Chef said that when he arrived here 8 months ago, the truffles were already here.
Ordered by the previous chef. Not only are they cryovac'd but they are / have been stored in the freezer.
Now this not something I have ever heard of before. But I suspect ( as chef does) that taking them out would not be a good move. So we will remove only one or two to try.

I did think a nice start would be scrambled eggs with sliced truffle.
The eggs need to be cooked gently. Not whisked within an inch of their lives. IMHO the best recipe / technique is the Bill Granger version.

I will need to see what his larder has in stock.
Feel free to make suggestions.
