How do you store your wine [+ Fridge/Cabinet recommendations]

View attachment 343474Ugh. Opened my Vintec today to discover white mould growing on bottles and shelves.

The internet tells me it isn’t that uncommon, but it’s annoying and a bit gross.

Have cleaned everything with vinegar and will reduce the temp (it was at 12). Any other tips??

I have mine set at 16° and it reads 64% humidity. Very happy with those numbers.
 
I've had my 6ft vintec for 15 yrs now and haven't had said mould issues. It's set at 16C (although LED display has had it).

Not sure if anyone else has experienced this issue, but if I lose power or it trips, the vintec resets to the coldest temp setting (11 or 12). Have to be diligent when resetting the clocks to also do the fridge...
 
After seeing the posts, I checked my Hisense fridge as I've had to reset the other devices that are onten same power point. Thankfully it's kept the settings for both zones 15/5 deg
 
12 is too cold IMO set at 14 -16 deg. is it an old fridge cellar? How long has it been happening? Email Electrolux to check what May be done to eliminate.. mine are 3 years old and definitely don’t have that problem..
Why under 16ºC - I have my cellar at 18ºC, always have and always will.

Nice one, No problem here, You’re drinking yours at room temp and not so much cellaring so always at your convenience? Aging will be speed up a little at that temp. But each to their own. Plus generally I like the chardy at 14 straight out and into it..

Same resets default temp at 12.

Curious to know if anyone has experience in building a standalone cellar? i.e. in a shed?
Whilst Ive got a 6ft 100+ fridge at home majority of my cellar is stored off-site at a 3rd party facility.
I don't have a spare room to convert or ability to dig down so thinking I might draw up and build a standalone (insulated, temp controled) cellar in my shed. Can easily accommodate 2x4 or larger.
Just seeing if anyone's had a crack at doing similar. Ta!

A friend built their cellar underneath their garden shed. He dug out the cellar first and lined it with reinforced concrete blocks, with a timber floor over it (with insulation underneath), and then the shed on top. There's a stair/ladder to get down, and he rigged up a small ventilation fan with a flue to move the air around and keep the temperature and humidity in the right range.

I built my last cellar underneath a large deck. It was essentially a cool room structure with a Fondis cooling unit in one of the walls (to keep temps at 14 degrees instead of 4). It worked well, with the cooling unit's compressor not needing to kick in all that often. (With the deck overhead, it was in permanent shade.)

You could in theory do the same thing within a shed - however, the "outside" temp for the Fondis cooling units is a maximum of 35 degrees otherwise you risk damage to the compressor. (The 35 degrees would be the temperature inside of the shed. Unless the shed is shaded,I imagine most places around Australia would regularly have temps exceeding 35 degrees in the summer months.

kookaburra75's suggestion above would work. If you weren't confident doing it yourself, you can get prefabricated concrete structures which are cellars. Waterproofing would be needed, and you could build a shed over the top of it to conceal the entrance. Depending on where you live, there still might be temperature fluctuations inside the cellar over the seasons.

I was thinking more or less as you've described, looking at say the Wine Guardian unit from MacPhees. Interestingly they don't advertise such temp constraints. Some have remote condensers but dont think i.can do that.
And 100% correct, the shed in summer when outside temps can get above 40C for days/weeks prob not great for such units.
Unfortunately can't really install anything below ground and shed's already built with slab etc..
Back to designing the *** indoor walk in glass cabinet/room...

It was set to 12 but I put a thermometer in and it read 14.5, which is why I thought of setting it lower. Humidity is 75%.
Temp seems pretty good. I think you could do with lower humidity and that will help your mould issues. 60% would be fine. If you have cork closures then humidity isn't important.

Domaine Leroy – amongst the most expensive of Burgundy’s biodynamic wines – recommends storage at 12-15 Celsius both for red and white wines (see label below).
This means one needs either a very cool natural cellar, climate control, or a wine refrigerator if this recommendation is to be followed. And do note the humidity recommendation on the Leroy label: a minimum of 80-85%. This is very high indeed.
