Wanted something with a bit of earthiness and this super Tuscan delivered. Wine was a great match to this super simple pasta dish with shaved truffle.

Depending on what the specials end up being, I’m thinking an aged Hunter Semillon or Chardy. They do a fantastic carbonara (truffled egg for the sauce with extra truffle on top).I find older wines that are a bit earthy are a great match to truffle. Especially red Burgundy or Barolo. White Burgundy or even the high acid whites from Jura can be a good match too. You don't want to over power truffles with a big ballsy red that's young.

I’m not a huge Pinot fan but we’ve got gallons ageing in the cellar and the dirt flavours of Pinot match truffle

The other stem actually makes me cringe... the water glass actually might be more apt given it has a bigger bowl size? Great minds....Hahaha... I do often think that the water glasses have a better bowl than the wine glasses at many restaurants (especially when the stubby RSL stems are offered)
