Steak is currently reverse seared on Weber. Lid closed.

Your Weber is so much bigger than mine 😅

So I had to google this reverse sear thing and found out that this is the way I cook pork ribs. Slow cook for a few hours then blitz it with high heat and spice.

So how long to 'cook' before searing. Likely I should do this on the Teflon mat wouldn't the direct method char before ready?

Bought one of these the other day. Works well!

I was just asking my electrician about something like that this week. My ducted RC is about 15 years old so I'll have to do some investigating

If you AC has a remote it should work. Just mimics the remote.

Looks good. Bit worried about 56C! I do my reverse sear to 43 then in very hot pan for 1-2 plus butter.

Why do people buy tomahawks when you have to pay an extra $10 just for the bone? Why not just bistecca or beef rib?
City Market Butcher friend of ours said it's all for show at dinner parties.

Friend on mine suggested this unit. Not enough benck space for it tho.

So plan to buy this one.

A steak?
I use an Inkbird Bluetooth thermometer.
When doing this tomahawk, I did it on indirect heat (Weber Summit) to an internal temperature of about 56C which took about 25 minutes. Remove and rest (about 5 mins) whilst you turn the BBQ on full bore. Sear for 1 or 2 minutes each side.

While I have been tempted by a tomahawk steak from our local butcher, I normally go for a thick cut porterhouse. I use a Meater+ probe which has the range so I can watch it from the house while the bbq is doing its thing.

I considered the Meater but thought it rather expensive. Meater has a very good reputation.
My Inkbird serves me well, I sit in the lounge room and just wait for my phone to ring when the temperature set point is reached.

We’ve been using an iGrill thermometer with two probes for many years. Happy with it.

Well that’s it
I’m buying a meat thermometer - what have I been missing out on all my life on my Weber. Thanks for the intell guys. Will be another item on the shopping list for the new place

IF you don't want to spend a fortune on a wireless one, I picked this up for $17 last year.
