Another day, another successful roast pork leg. Moist flesh, juicy and a wonderful rich reduction (finished with red wine) to go with it...
...except we cheated on the crackling skin. Mum bought a few legs today and we only roasted one, but cut off the skin from the other legs and roasted them alongside.
Ironically, the skin which we had added to the roasting leg crackled beautifully, whilst the skin on the roasting leg remained flaccid without so much as a bit of crackling.
I still don't like our biased oven. I guess you learn to live with it, just like your most despised teacher at school.
We have some friends over from Ireland (including the little ones) - you'd know who Going to do a roast tonight and given the meateaters out-do the vegetarians (5v1 ) I shall be doing one today. Been a long time..... let's hope I don't muck it up!!

What kind of meat are you roasting?
The veggo in the house will not be quite happy - especially if it means cleaning the oven (you know, to get rid of any meat traces and have a neutral oven again) Better get some tofu or tempe on (just kidding - don't ask me about good vegetarian food - I only know Mexican, Italian and Greek....)
The key to a good roast is basically not overcooking it... and resting is very important. I insisted on resting the meat and I've gotten at least a good result every time.

I take it you have no daughters or friends with daughters or their friends... (not that you could sell it to them or what not, but rather if they knew then you might just be a hunted man. Then again, there's a marked difference between 11 double passes for Taylor Swift, that for Justin Beiber and that for One Direction).

Were they more specific than "a chemical"? I recycling of the fuel vapours can kill story that's been around for years.
There's thousands of chemicals in air that can harm us.
