" Aceto Balsamico Tradizionale di Modena is made of cooked Trebbiano grape must and aged in wooden barrels of chestnut, cherry, oak, mulberry, ash and juniper. Presently it is covered by the Protected Designation of Origin(PDO) in order to safeguard its noble and renowned tradition. The product bears the 'Traditional' name only after passing all controls and, once it passes the organoleptic test performed by the master sommeliers, it is bottled in the only bottle authorised by the ministry for manufacturers of Modena. Packaging includes a nice robust carton box and a description booklet. It has a characteristic and complex, penetrating BOUQUET together with an agreeable and balanced acidity. Its traditional and inimitable FLAVOUR is a delicate balance of sweet and sour, full-flavoured with velvet undertones. The traditional balsamic vinegar of Modena P.D.Ois unique in the world of vinegar-based dressings obtained exclusively in the province of Modena from cooked grape-must. It is a rich, dark glossy color, its characteristic DENSITY is found in its correct, smooth flowing syrupiness. TRADITIONAL BALSAMIC VINEGAR OF MODENA P.D.O. is obtained from crushed grape-must which is cooked, matured through slow acidification, deriving from natural fermentation and progressive concentration, and through lengthy aging in a series of small barrels of different kinds of wood , with no addition of aromatic substances. "

Marc Chagall did a special commission for a family in sussex at Tudely Church. Definitely worth a diversion if you are in southern England. Great to visit. Never anyone there! Have some photos somewhere!

“On 19 September 1963, Sarah the daughter of Sir Henry and Lady D'Avigdor-Goldsmid who owned nearby Somerhill House,was drowned in a sailing accident off Rye, East Sussex.In her memory, the couple commissioned Russian-French artist Marc Chagall to design a stained glass window for the church.[8] which was installed in 1967. When Chagall arrived for the dedication of the east window in 1967, and saw the church for the first time, he exclaimed "C'est magnifique! Je les ferai tous!" ("It's magnificent! I will do them all!") Over the next ten years Chagall designed the remaining eleven windows, made again in collaboration with the glassworker Charles Marq in his workshop at Reims in northern France. The last windows were installed in 1985, just before Chagall's death.”

Yes, I wonder if we’ll ever travel OS again. CV vaccine probably in 2022, and if no other pandemic by then, then have to find EK A380 flights! :cool:
