Currently sipping on the 15 now after taking delivery earlier in the day. Finding it to be more aligned to the 17 which I loved than the 16. Must be some bottle variation given the NG 88 score earlier this year for the 15 which suggests the wine is past it's best which after tasting I dont agree and the other mixed feedback from the other vintages on this forum.
I don't know how you guys do it. I can't remember the tasting notes of a wine I drank last night, let alone comparing vintages from different wines over different time periods.
This is a subject that I encountered with many wines. It's quite interesting that some wines actually taste better the next day after opening, decanted or not decanted.
Do you guys think that a 'slow' aeration (or in contact with air until the next day) in the bottle is better to evolve the flavour in the decanter after the first few hours? Or actually they should be the same if I leave it in the decanter for a longer time?

Obviously this is subjective to people's personal taste, but IMO there are very few wines that improve with 24 hours of aeration. For the rare bottle that does last more than a day in my household, and then shows better on day 2 (day 3 would never happen) I consider it a very good sign for further ageing.
It really is such a pleasure when it happens, the other day I opened a delightful Barbera, that was full of fruit, dusting of tannin and a lick of cleansing acid at the end. Left overnight due to previous over-indulgence and then on day 2 it kept all the fruit and acidity but developed a deep leather/chocolate characteristic too. Was doubly nice as Barbera at that price point does not have a reputation to withstand ageing.
I will say I rarely find wines that start off under-whelming then transform into something better the next day - YMMV.
I think it comes down to what you are expecting. I gather from your comments over the years that you like a particular style of wine and assess against that. My preference is for variety so I'm going to be more positive about something that is a little bit different (eg the I didn't mind the Douglas that so many sent back a while ago). My original commentary on the Sharktooth was positive, based on the complexity I assessed for a wine I paid $15 for. Also that it wasn't a typical shiraz, more spice/tobacco/leather is what I got from it. The Old Faithful was more Shiraz-like.
For me, Serafino's black label cabernet is a quality wine and I'm happy to pay $20-25 for it. In that context I think the Sharktooth still qualifies as good value. YMMV of course!
I can concur that Serafino makes great black label Cab Sav. But I have never seen so much bling on a single bottle!
Didn't buy it via VM, AFAIK VM only sold Sharktooth and Terremoto.
Final tasting of the 2016 Serafino and yes, it does require an astonishingly long breathe (three nights is something of a record) but I still don't think it is worthwhile hanging onto the remaining five bottles, I think RB is probably right in his comments regarding variation under cork and I genuinely don't think this will self-correct with aging. In the immortal words of Dragon Den's Duncan Guillotine "I'm ooot"...

It always pains me to send back a much-anticipated wine but life's too short and all that, @AnzacPaul bizarrely I still have a final glass left in the bottle so maybe four nights will be the clincher!

Mmmmmm, finally got my hands on a half dozen of the 2016 Sharktooth Shiraz that has been discussed quite a bit by our esteemed members. Pulled the cork last night, used an aerator, poured it out and gave it a swirl and first impression: underwhelming would be an understatement. Thin, quite acidic (to the point of astringency), a distinct absence of fruit, really rather insipid. Decanted and left for a couple of hours, marginally improved but to my humble palate there is a lack of generosity and "drinkability" that surprises me, I'll revisit it tonight and hope for it to rise like Lazarus from the grave but at this stage I'm contemplating a return, YMMV of course .
Now you will have to start working out at the gym after transitioning to the 6 bottle VM deals from the much heavier 12bot case which leaves you a bit underwhelmed when having to carry 5 back to the PO. The sweat and tears was at least worth it after knocking down a free bee only to trundle and front up at the PO with 'Hi folks, it's Vinnie mof_ here again". They're sick of the sight of you which says more about VM than about your WandD. I was enticed with a Barossan sixer sharing with a friend. $104 delivered may seem great but if I have to send them back, i will. I reckon it's the Curtis Cav 2020 shiraz. This is often flogged here and I have had a few back vintages in the late teens and Cabs and a blend as well. Like you, nothing ventured nothing gained. Reviews for ,20 seem OK but again we have the VM age old question, What should a seventy bucker taste like? But it aint a seventy bucker to start with, or is it.
this from june 2020.andrew04.
"It seems like nobody ever buys these wines at full price, but this appears to be consistently rated high, and $20/bottle would seem like pretty good value. Even on Wine Direct it's sold for $60/bottle (and $70/bottle at DM).
Keen to know if I'm missing anything here?
This was about the 2016 so let's see if anything has changed?
Maybe I haven't been reading as much but what was the last VM that nailed it for you WandD?

I opened the Glen Eldon Eight Barrels tonight, it was alot better after an hour or so but still very underwhelming....will see what it's like tomorrow.

Yeah I opened one tonight too. I found it has a certain sweetness to it which I'm not sure I like. Easy to drink I guess, but not an age worthy wine. My brother loved it - I found it ok (and I guess for $15 or whatever it is fine).

Cue- Rod Stewart's Tonight the Night ( Gonna be Alright).
How much is their left? A mouthful? Hopefully more. But this 4day exercise is ridiculous isn't it, rhetorically speaking.
Great to see a fellow champion of the grape back in form BF! The sourpusses at our local PO are seldom glad to see me (or anyone else for that matter) but it is getting a little embarrassing I've got to say. The Curtis Cavalier has left a bad taste in my mouth ever since I rocked up to a Xmas luncheon some years back thinking I'd brought along an $80 cracker and it turned out to be a damp squib
I think @Andrew04 hasn't missed much, possibly dodged a bullet, the 2016 Sharktooth isn't so much a maneater as a minnow in an oak barrel but before I get thumped in the ensuing scrum YMMV is a given...
I was actually hoping there was less than a mouthful left last night but I manfully struggled through the last glass and turned the printer on in readiness... Cue Rod Stewart's I don't want to talk about it
Opened my 2015 Sharktooth (under screwcap) as I await for my 2015 under cork to arrive from VM. It is very good. If VM 2015 under cork is as good as this, I will be happy. Still a bit disappointed that VM misadvertised the closure method.
I am not so "engaged" as to decant a friday nite quaffer.. so my cork '15 is breathing in a glass.. awaiting my presence..the cork smelled good..so we shall see
