I find both woefully inadequate. American Airlines has this right, if the crew does as they should. And if on AA you can get a beer/wine/simple long drink, then Qantas should be ashamed to only offer water.
It can be a bit tricky, but I find that on AA and similar airlines, there seems to be a lot more time for boarding, which allows the crew to offer an enhanced beverage service before takeoff. Also, in the flight attendants aren't required to check boarding passes, which means that there is an extra pair of hands at the front to assist (assuming there is two crew at the front).
Given boarding in Australia is generally quite quick, and one crew is dedicated to checking boarding passes, it would not be practical to offer a full beverage service to the passengers in J. Also, I know on QF that once boarding has commenced, any galley preparation needs to be ceased. This means that the crew should be focused on their safety duties (apart from delivering the drinks once able to) therefore reducing the time available to delivering anything more than a pre-poured drink.
I also know that QF have different liquor licensing agreements in varying states and therefore are unable to offer alcoholic beverages before takeoff on a domestic sector. This may different from other Australian airlines, however QF are unable to.

In terms of headphones available in the business class cabin. On most sectors, it'll be the same kind of headphone for both economy and business class. On certain flights to Perth (from east coast capital cities), an enhanced black headphone (two-pin) will be offered in J Class. On certain international flights, the three-pin noise cancelling headphones will be offered.
With the introduction of the new suites on the A330. All domestic sectors on the A330 regardless of length will have the black two pin over ear headphones (not active noise cancellation). This means that on a SYD-MEL sector operated by A332 will have over-ear black headphones, but the B737 will have normal, simplified headphones. The reason being that the upgraded headphone will accompany the upgraded business class suite.
So basically, in terms of domestic flying, the headphones will be the same through the whole aircraft, the simple small headphones, unless flying on A332, or east coast capitals to Perth where it'll be the larger black over ear ones. International will always have some form of upgraded headphone.
