It is pearly couscous. You have different consistencies available.
It's known as Israeli or large pearl couscous from memory.
Either it's a figment of photography, or maybe that cous cous has plenty of butter in it.
In fact, you could almost fool me that it was polenta instead, except that polenta isn't rendered into small balls.
