There was a program on SBS tonight about the chemistry of food and how we taste etc it. Segment on jamon iberico, which I see you were enjoying. Really interesting relationship between the acorns, the pig's gut, how the pigs' meat is cured in a very thick layer of fat and the bacteria that creates the taste of the jamon after it is sort of pre-digested by the bacteria, encased in the fat.

Yes, I know, too much information, but interesting that there IS a reason why that meat is so wonderful to eat.

Exactly which one(s) and where?

In Segovia,

Jose Maria Restaurante José María de Segovia can’t recommend more highly. Went there twice.

The one near the aqueduct Meson Candido Meson de Cándido and there are nice bars in the street.

Drinks and snacks in Plaza Major, we liked Juan Bravo – Fonda Ilustrada

We stayed at Reservar Hotel Eurostars Convento Capuchinos en Segovia for three nights. Excellent location and good hotel with easy parking (and lift to hotel).

Remember it’s not possible to eat before 8, and in reality Spanish don’t arrive at restaurants before 10.
